For the adjective, the thing I listen for is wounded pride. A late bus is annoying, but it is galling when the bus company charges you a fee after their own app failed. Thats the flavor.

If youre dealing with stainless fasteners, galling is the moment the nut suddenly goes tight and wont back off, not just ugly threads. Back it off as soon as it feels scratchy, because forcing it usually welds the mess worse. Anti-seize or a proper assembly lube is boring but it saves the part.
